Roasted carrot hash with sage, cinnamon & bacon

Hash is Paleo/Primal/Real Foodie Speak for “cook everything, toss it in a bowl, and put an egg on top.” (Actually, the “egg on top” isn’t required, but what do you think I am – a crazy person?)

Hash is, hands down, the best way to use leftovers; the easiest way to impress friends, family, and potential suitors with minimal effort (who wants to try, really?); and the most delicious pit-stop on your vision quest to deliciousness.
Eat it frequently, and often. (Yes, I know those are synonyms. It was for effect.)
Hash can be made in many ways. YOU LITERALLY CANNOT DO IT WRONG. This is a great confidence-booster, because even if you burn everything, cut your finger, spill hot coffee down your pants and cry, you can still put an egg on it and call it hash and it will taste good. Promise.
This recipe combines roasted carrots, tossed in spices, with bacon. It’s so simple I could cry.

Pete’s Paleo bacon isn’t bacon in the conventional sense; that is, it’s not a long floppy slice of pork belly slathered in refined salt and dextrose (blah). It’s a hunk of pork belly cured with spices, cold smoked, and shipped unsliced, with all the delicious flavors of the pasture-raised pig intact.
For this recipe, I sliced the hunk into square chunks. I chunked the hunk.
You can, of course, also use your choice of bacon – for this recipe, a basic bacon works best (ie not andouille bacon, or maple sugar bacon, or candy corn bacon). The flavors of pasture-raised bacon are truly amazing, so aim for that if possible. You can check Eat Wild for a farmer near you!

Savory roasted carrot hash with sage, cinnamon & bacon (Paleo, Primal & Real Food Friendly!)

Slightly sweet, savory, simple and downright delicious. (Note: do your chopping & prepping while the oven heats!)
Ingredients
  • For the roasted carrots
  • 3 cups (approx.) of peeled and chopped carrots (I use the [url href=”http://amzn.to/1anGq26″ target=”_blank”][u]chop wizard[/u][/url]) to make the pieces perfectly uniform, quickly
  • 2 Tbs. melted ghee (I use [url href=”http://amzn.to/UELp8s” target=”_blank”][u]Pure Indian Foods[/u][/url]) or desired cooking fat
  • 2 Tbs. sage
  • 1 Tbs. cinnamon
  • 1 tsp. sea salt (I use [url href=”http://amzn.to/1a8LUl8″ target=”_blank”][u]Redmond[/u][/url])
  • For the bacon
  • 1/2 lb. bacon, chopped into uniform chunks (more or less bacon is ok too – whatever your taste buds like)
Instructions
For the roasted carrots
  1. Heat the oven to 400 degrees.
  2. Toss chopped carrots with melted cooking fat, sage, cinnamon and salt.
  3. Spread carrots across a baking sheet – make sure they’re not crowded; give ’em room to roast!
  4. Roast for approximately 20 minutes, or until the carrots begin to brown.
While the carrots roast…cook the bacon
  1. Cook the bacon chunks in a skillet over medium heat until cooked through.
  2. Drain the bacon drippings (save them if desired)
  3. Combine cooked bacon with roasted carrots, top with poached or [url href=”https://realfoodliz.com/perfect-pried-egg-with-roasted-parsnips-bacon-good-food-for-bad-cooks/” target=”_blank”]”pried” eggs[/url], and enjoy!

  2. I love sweet potato hash so excited to give this a try. I’m uber lazy though so I’m wondering if I could bake the bacon on a rack on top of the carrots. Probably too much grease, huh?
    Usually I just make hash on the stovetop–I add dried cranberries and spinach to it. Soooo good!

  3. I just made a big batch of this for lunch. I added a few other ingredients, just because i was in the mood for them and had them on hand (chopped leftover steak, garlic, onions, etc.). I used fresh sage, because I happened to see some at Trader Joe’s earlier today. So yummy and nourishing! I plan to make another two meals out of it for the next day or two. This is a great format for cooking in bulk when you’re busy. I read your email about eating a good breakfast, and I’m definitely going to have this tomorrow morning. Thanks for the great ideas!

  4. Made this for lunch for me and my daughter. Delicious! I added some onions to the bacon and then kale at the end. Didn’t have any fresh sage, so used dried. And made soft-boiled eggs since I don’t have the kitchen skills to make pried. Thanks for a nutrient-dense delicious recipe. Will become a regular meal around my house.
