Healthy Paleo Dessert: Ten-minute Apple Crisp!

This ten-minute Apple Crisp is one of the yummiest healthy Paleo desserts ever. Ev-er. (At least, I think it’s a crisp. It might be a crumble. Or a cobbler. I dunno. But it’s kick-you-in-the-crotch-spit-on-your-neck-fantastic.) It’s yet another achievement for my Good Food for Bad Cooks Hall of Honor.
I stumbled upon this idea whilst messing up Thanksgiving. After my third attempt at making a decent Paleo apple pie, which was also my third time forgetting I had a pie cooking until smoke and burning ensued, I kind of gave up and accidentally made this. But it wasn’t a bad accident. It was, like, accidentally discovering Penicillin amazing happy accident.
I have to admit: the cooking process DOES take 10 minutes, but that’s contingent on already having chopped apples and Cinnamon PaleoKrunch at your disposal, as I did. If you don’t already have those, this is more like a twenty-two minute Paleo Apple Crisp. But that doesn’t sound as good.
(PS: Thanks to those danged Kardashians, I want to spell everything that starts with a “C” with a “K” instead. Paleo Apple Krisp. GAH!)
The kitchen tools that really make this a breeze are the Chop Wizard, which I talked about in this post, and an apple/potato peeler – which are both pretty much necessities when you eat as many veggies and fruits as us Paleo – Primal – Real Food folk do. (Seriously. These time-savers pay for themselves in a day of cooking.)

Healthy Paleo Dessert: 10-minute Apple Crisp

This healthy Paleo dessert is delicious AND nutritious: it’s full of healthy fat from coconut and/or pastured butter, it’s got warm, healthy cinnamon, and it will make your mind happy, which is the most important thing.
What you’ll need:
(all ingredients are available at Whole Foods or Natural Grocers/health sections; my ordering recommendations listed where applicable)

  • 4 small or 2 very large apples of any kind, peeled, cored and diced (peeler and chopper recommended)
  • 2 Tbs. coconut oil or butter for sauteing (pretend I put an accent on the word “sauteing”)
  • 2 Tbs. cinnamon
  • 1/2 cup full-fat coconut milk
  • 1 cup Cinnamon PaleoKrunch.
    If you don’t have PaleoKrunch, simply toss 1 cup crushed nuts with 2 Tbs. maple syrup (optional) for simple topping. Even better, roast them first for enhanced crunch and flavor.Just FYI: the Krunch is awesome to have around for emergencies. Store it in the freezer and whip it out when you need to impress. Preferably while saying, “excuse me while I whip this out.”

What to do:

  1. Saute the apples in the butter or coconut oil over medium heat until the apples “give up” their water. (About 3 minutes.)
  2. Add coconut milk and cinnamon, and continue to saute for another 5 minutes.
  3. Put gooey, delicious apples in a dish of your choosing and top with PaleoKrunch!
  4. Serve and graciously accept compliments while stuffing your face with a healthy Paleo dessert.

  7. I stumbled upon your website recently and made this last night-delish!!! I may use honey instead of maple syrup for the topping next time, just to change it up. I also ordered the apple peeler/coring device and chopper you recommended. I’m not sure how I’ve survived without these! Next up, the “pried” egg! 🙂
