Coconut Shrimp Cakes

Mark’s Daily Apple is a terrific resource for the novice Primalite as well as the seasoned Paleo devotee. A few months ago my MDA Primal Blueprint Cookbook arrived and I immediately selected a few recipes that would become weekly staples – Bison Chili and Sausage Stew.
Another MDA recipe is on its way to staple-status as well. The PB Cookbook’s Shrimp Cakes with Spinach Slaw and Coconut Almond Dressing was truly tasty. While I’m blogging the simple recipe for Coconut Shrimp Cakes – they’re great on their own – you’ll have to buy the cookbook for the rest!
Ingredients:
Liberal coconut oil, salt, juice from 1/2 lime, chopped Cilantro, 1/3 can coconut milk, minced jalapeno, 1 lb. chopped naked shrimp (by naked I mean – remove all the junk nobody wants to eat).
 

I used about 2 Tbs. cilantro.

 
 
I can't take too much heat, so I chopped just about 1 Tbs of the milder outside portion.

 
Heat the coconut oil on medium.
Combine all other ingredients in a food processor and pulse. Shape mixture into small patties – about the size of a larger spoonful – and give each a nice shake of salt before adding to the skillet.
Cook the patties in coconut oil until lightly browned, flip, repeat.
 
The smaller the patties, the better they stay together.

 
 
I don't even like shrimp...but I LOVE these.

    1. Isn’t that the dream! You may be on to something there…a Paleo commune! Blissfully isolated from the outside world and inherently more attractive than the standard nudist colony. Er, not that anyone would have to be nude…I…errrr (diggin’ a hole) …
      I have been needing to try more seafood now that I’m in the Far East. Crab specifically. I will be mining PM for inspiration!

Will be trying them this weekend…thanks for your kind words on my blog- I totally agree after reading that artical about gestational that I got from you…hoping I pass this 3 hour one that I took today, just spoke to my endo and she is super cool so I am thinking as long as my sugars stay low fasting than I should be able to aviod insulin….will keep you posted!
